One bowl of noodles, a legendary story.
In 1942, World War II had reached a stalemate, and China’s War of Resistance against Japanese aggression was at its most intense stage. Japan had blocked all supply routes from the Allies. To secure the delivery of essential war supplies, the U.S. military established one of the most dangerous air routes in history—The Hump Route, flown by the courageous pilots of the Flying Tigers.
This treacherous route stretched from Assam, India, to Wujiaba Airport in Kunming, China. With perilous terrain, unpredictable weather, and relentless attacks from Japanese forces, it became known as the “Death Route.” Over 1,500 aircraft were lost and nearly 3,000 pilots perished. It remains the most tragic chapter in the history of wartime air transport.
That same year, two professors from Southwest Associated University in Kunming opened a
rice noodle shop near Wujiaba Airport. As they spoke English, young Flying Tiger pilots would
often come to enjoy a bowl of Yunnan rice noodles after completing their missions. Before
eating, they would gently clink their bowls together like wine glasses—a toast to surviving today,
and a wish to return tomorrow for another bowl.
This was more than a bowl of noodles—it was a ritual of survival and brotherhood.

The Brand’s Inspiration
Out of deep respect for those heroes and gratitude from the Chinese people, Mr. Jiefu Wang decided to recreate this “heroic bowl of noodles” in America. Through it, he sought to honor the memory of the U.S.-China alliance and remind people of the hard-won peace we enjoy today.
Thus, he founded 575 Miishien in 2016 in California’s Silicon Valley, with the mission of bringing
Yunnan rice noodles to the world.

What Does “575” and “Miishien” Mean?
The number “575” represents:
👉 5 bowls of rice noodles, 5 bowls of wheat noodles, and 7 signature side dishes The font of the numbers “575” in the logo replicates the military stenciling used on Flying Tiger aircraft—a tribute to their legacy.
Mr. Wang also coined the English word “Miishien”, which mimics the pronunciation of “rice noodles” in the Kunming dialect—giving Yunnan rice noodles their own unique identity in the English-speaking world.

In 2018, in an anonymous expert tasting session hosted by A Bite of America, 575 Miishien earned a score of 99, and was rated the best rice noodles in the U.S.

About the Founder: Jiefu Wang
• Mr. Wang is a native of Yunnan, China, and is the only overseas contributor to
the official standards for Guoqiao Mixian (Crossing-the-Bridge Rice Noodles).
• He has more than 300,000 followers on platforms like TikTok and Douyin.
• In 2011, he donated a teaching building to Jingdong Middle School in Pu’er,
Yunnan Province—now named the “Jiefu Cultural & Sports Hall.”
Even after founding 575 Miishien, Mr. Wang never forgot his mission:
For every 3 bowls of noodles sold, 1 lunch is donated to a child in need.
As of today, over 32,000 meals have been donated to children in poverty-stricken mountainous
areas.

In 2019, during a speech in Yunnan in front of industry leaders and culinary elites, Mr. Wang
confidently declared:
“Even in Yunnan, you might not find rice noodles tastier than ours at 575.”
